Here are those recipes I promised:

Green Juice

Ingredients:

1 small handful parsley
2 apples
1 handful spinach
2 stalks romaine
1 cucumber
1 lemon
1/2 inch piece ginger

Directions:

Juice all ingredients together and enjoy!

 

Energy Boosting Quinoa Salad

Ingredients:

1/2 cup quinoa, cooked
1 cucumber, sliced
1/2 tomato, diced
1 avocado, diced
2 -3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
Salt & pepper to taste

Directions:

Place all ingredients except avocado in a bowl and toss well. Top with avocado and enjoy!
