Get ready to sink your teeth into my superfood version of what used to be one of my favorite candy bars. It’s called…
Almonds – What A Joy!

Base Ingredients:
½ c coconut oil
¼ c xylitol
1 tsp vanilla extract
1¼ c shredded coconut
½ c almonds
Topping Ingredients:
¼ c xylitol
½ c coconut oil, melted
¾ c raw cacao powder
1 tbsp vanilla extract
Directions:
1. Place cupcake liners in a 12-compartment muffin tin.
2. Prepare the base by melting coconut oil and xylitol over low heat and whisking together.
3. Add vanilla extract and shredded coconut and pour into cupcake liners.
4. Sprinkle almonds in each compartment and place in the freezer for 10 minutes.
5. Meanwhile, make the topping by melting coconut oil and xylitol over low heat and whisking together. Then combine with the rest of the topping ingredients in a bowl and mix well.
6. Pour topping over each bar and put back in the freezer for 10 minutes or until chilled. Enjoy!
Tip: Make sure the coconut flakes are unsweetened. Since this recipe will be an occasional treat, pony up for the best quality of coconut oil you can find. Ideally, it would be an extra virgin, raw, unrefined, certified organic coconut oil. If you don’t have xylitol on hand, substitute a quarter cup raw honey instead for both the base and the topping.

Hey Cynthia, I have been wanting to try your program, but still nursing my 19 month old on and off thru the day.. What are your recommendations? I have alot of baby weight to lose and have tried different programs, but they didn’t work well.. I am ready for a change!

Hey Jessica! You can do PINK Method while nursing but talk to your doctor first. You need to make sure you are getting enough nutrients for you and your little one! We have had thousands of women be successful with the program and I know if you do it just as it’s designed it can work for you too. I wish you all the best! Please keep me posted!!

oh yum Cynthia oh yum, glad you wrote on FB that honey could be used instead of xylitol since it’s a corn product and I have a corn allergy. A new cookbook YEAH!!!! I recently donated all my S.A.D. cookbooks to the local library since I no longer want to eat that way. I could not stand to throw books away. I’m starting my collection of happy healthy whole foods and plant based cookbooks now. Yours will be an awesome addition.
Hi TeaJae! The best quality xylitol (and the one I recommend you use) is actually made from birch wood, not corn. You might want to look into that because it’s a wonderful alternative to sugar! If you do use honey (and there’s nothing wrong with that, honey), go for organic and raw honey. I LOVE that you are cleaning out the old to make room for the new! I think the cookbook will look beautiful on your shelf

Hi Emmie! Yes, raw and organic honey. You can find it at your health food store, but even Trader Joe’s carries it!

lol No, we’re in Iowa but you could join us on Skype. My mom does that from Florida.
Can I freeze them? If I make 12 hubby and I will eat 12 unless they can be frozen for quick treats at a later date. I only cook for 2 so healthy meals and snacks that can be frozen are almost a must for us to be cost effective.
